White Chocolate and Elderflower Shortbread

Buttery golden shortbread flavored with delicate elderflower and studded with chunks of creamy white chocolate is an irresistible tea-time treat.

Servings: 24

Total Time: 1hour 45mins

Ingredients:

1 tbsp fresh lemon zest

1 tsp vanilla essence

½ cup superfine sugar

3 tbsp elderflower cordial

2¾ cups flour

2 cups + 1 tbsp salted butter

½ cup white chocolate chunks

Elderflower cordial (for glazing)

Powdered sugar

Directions:

1. Add the lemon zest, vanilla essence, superfine sugar, and cordial to a bowl and whisk with a fork until combined.

2. Beat in the butter until smooth.

3. Mix the flour into the butter/sugar mixture a little at a time until incorporated.

4. Fold in the chocolate chunks.

5. Place the dough between two sheets of plastic kitchen wrap and roll out to an even sheet, 1cm thick. Chill for an hour.

6. Preheat the main oven to 360 degrees F.

7. Use a cookie cutter to cut shapes from the chilled dough and arrange on a cookie sheet.

8. Brush the pastry with a little more cordial and sprinkle with powdered sugar.

9. Pop in the oven and bake for 15-17 minutes, until light golden.

10. Allow to cool before serving.
